Cutlery Sharpener
A cutlery sharpener can come in several different versions:
stones, sticks, slots and electronic. All the styles are a bit hit or
miss for the home kitchen chef – most review sites identify one
or two specific brands on the market that really do what they claim
to do.
Bench stones are the most basic cutlery sharpener. A guided stone system
is also common. This style uses a stone and a guide to position the
blade. Ceramic rod sharpeners, also called “crock sticks”,
are rods held at an angle and the blade is brought down against the
rod in a slicing motion to do the sharpening.
Slots are a common cutlery sharpening gadget that is available at kitchen
stores. The blade is drawn through a slot that contains tungsten carbide
tool inserts or overlapping carbide wheels (low-tech). A more refined
version of the slot sharpener will have ceramic wheels or rods –
a set of fine and a set of medium grade.
